Pesto is so simple to make. When I first found out how to make it – I was like, “Huh? That’s too easy.” The main ingredient is basil. I’m always growing basil in my raised garden bed and if you don’t use it on a consistent basis it can quickly grow, and grow and grow. And that’s when you make pesto! (you can also buy fresh basil at the grocery store and forgo the months/weeks of growing it in the garden)
This will honestly take you 5 minutes to blend up…so hence the name – Presto! Pesto!
2 cups firmly packed basil leaves
1/3 cup extra virgin olive oil
1/2 cup pine nuts
1/2 cup grated Parmesan cheese
3 cloves of garlic
1/4 teaspoon salt
black pepper to taste
Add all the ingredients listed above to your food processor (or blender).
Blend until smooth (adjust oil if needed to make to your desired consistency).
Jar pesto (or freeze in plastic bags) and refrigerate until needed.
Add desired pesto amount to hot, buttered Fettuccine. Buon Appetito!
