Pear Gorgonzola Flatbread

Do you ever feel as though you serve the same thing over and over? I feel like that when I invite friends over for lunch. I’m like – “Hope you like chicken salad…again.” Don’t get me wrong – I love a great chicken salad sandwich but sometimes I want something that looks and tastes amazing and is E-A-S-Y to make. This flatbread is it!  You literally just throw everything on top of Naan and bake for 10 minutes. It’s complete Naan-sense that I don’t do this more often!

Ingredients

2 large yellow onions sliced thin
3 pears, peeled and sliced thin
¾ cups crumbled Gorgonzola cheese
½ cups chopped pecans
2 cups Arugula
4 pieces of plain Naan
2 tablespoons butter
Alesso Balsamic Reduction (preferred)

In a large pan, melt 2 tablespoons of butter.  Add sliced onions. Cook over medium heat until onions caramelize, about 40 minutes.

Pear Gorgonzola Flatbread

Pre-heat oven to 400 degrees. Place Naan on baking sheet. Top Naan with caramelized onions, sliced pears, Gorgonzola cheese and pecans. Bake for 10 – 12 minutes.

Remove Naan from baking sheets. Top each flatbread with arugula and balsamic reduction.
