Fig & Pear Mixed Green Salad

On most days I make a standard salad for lunch – nothing exciting. But whenever we make this salad – it makes eating a salad exciting again. This salad is a mix of bright greens, crisp pears, sweet figs and salty gorgonzola. The dressing is light and fresh. It’s the perfect balance of sweet and savory. Instead of a recipe of exact salad measurements – we’ll list out the ingredients to make 1 salad and you can adjust if you need more.

Salad Ingredients

Mixed Spring Greens
Pear, peeled and sliced
Figs, sliced
Red pepper, diced
Red onion, sliced
Gorgonzola cheese

Salad Dressing

2 tablespoons balsamic vinegar
1 teaspoon Dijon mustard
1/2 teaspoon honey
1/2 teaspoon minced garlic
2 tablespoons olive oil
4 teaspoons water
salt and pepper to taste

Combine salad dressing ingredients in medium bowl and whisk together. Assemble salad ingredients in bowl and drizzle with salad dressing. Pair Mix Green Salad with French bread crostini with smeared goat cheese.
