Easy Banana Muffins

Ripe bananas. We have them, toss them then replace them with new bananas that will ripen to quickly only to be tossed and replaced. Stop the cycle! Use them for some delicious, warm banana muffins.

Ingredients
1 1/2 cups all-purpose flour
1 cup sugar
1 teaspoon baking soda
1/2 teaspoon cinnamon
1/2 teaspoon kosher salt
3 ripe bananas
1 egg
1/3 cup vegetable oil
1 teaspoon vanilla extract

Pre-heat over to 375.

In medium bowl, combine first 5 ingredients. In another bowl, mix together bananas (I find a potato ricer works great to mash the bananas), eggs, vegetables oil and vanilla extract. Slowly combine dry mixture into banana mixture.

Fill greased or paper-lined muffin tins with mixture.

Bake for 17 – 19 minutes. Remove from pan and let cool. Makes 12.
