Easter around here means homemade Chocolate Peanut Butter Eggs! These things are dangerous! Dangerously good! And super easy to throw together since they only involve a few items (that you probably already have in your kitchen)! Word is – even the Easter Bunny enjoys them! So why not leave a plate of these out for his/her basket stuffing efforts!
2 cups peanut butter
4 cups 10x confectioners sugar
1 cup butter
16 ounces chocolate (for candy making)
Place peanut butter, confectioners sugar and butter in large microwave-safe bowl. Heat until mixture has softened, about 1 minute.
Mix ingredients together until it becomes a dough like consistency. Shape 1.5 – 2 tablespoons of peanut butter dough into “eggs” or balls. Makes about 2 – 2.5 dozen. Refrigerate until “eggs” harden.
Melt chocolate according to the instructions on the package. Dip “eggs” into melted chocolate. Place dipped peanut butter eggs on wax paper until the chocolate hardens. Enjoy (then refrigerate)!
