Chicken Fried Chicken

Yes, Chicken Fried Chicken. I thought my mother was repeating herself like she always does but chicken fried chicken is a real thing.

Spoiler alert – this recipe is not going to make you skinny. But it will make you very happy. We usually make it on a Sunday  when we have a little more time to fry up some chicken, make a gravy and whip up some mashed potatoes. Happy yet?

Chicken Fried Chicken Ingredients 
4 chicken breasts
1 sleeve crushed saltine crackers
1 cup flour
3/4 teaspoon salt
1/2 teaspoon baking powder
1 teaspoon paprika
1 /2 teaspoon ground red pepper
1/2 teaspoon black pepper
3/4 cup of whole milk
2 large eggs
vegetable oil

Gravy Ingredients
3 + 1/4 cups whole milk
1/4 cup flour,
1 + 1/4 teaspoon salt,
1/2 teaspoon black pepper

Combine crushed crackers, 1 cup of flour, baking powder, paprika, 3/4 teaspoon salt,  1/2 teaspoon ground red pepper and 1/2 teaspoon of black pepper in medium bowl.

Whisk together 3/4 cup of milk and eggs a separate medium bowl.

Cut each chicken breast length wise for a total of 8 chicken pieces.

Dredge chicken in cracker mixture, then in milk mixture then back in cracker mixture.

In a large skillet heat 1/2 inch of vegetable oil. Under medium/high heat bring to 360°F . If you don’t have a thermometer toss a little bit of flour into the oil and if it sizzles it’s ready for frying.

Add chicken to skillet in batches. Fry for 10 minutes. Turn and cook for 5 additional minutes. Remove and place on paper towel.

When chicken is finished frying, drain the oil from the pan reserving 1 tablespoon of oil. In a medium bowl whisk 1/4 cup of flour, 1+1/4 teaspoon salt, 1/2 teaspoon black pepper into 3+1/4 cups of milk.  Whisk milk mixture into reserved drippings. Cook over medium heat for 10 – 12 minutes whisking constantly. Serve gravy over chicken.
