Have you ever been to the grocery store and seen a butternut squash and thought – okay…what do you do with that? The answer is you make a delicious Butternut Squash soup! This may look like a no thrills kind of soup but you’ll be surprised how one little spoonful packs a punch. This is the type of soup you make when you want comfort but also a little pick me up (which you’ll get from a cayenne kick).
2 pound Butternut Squash, diced in 1 inch cubes
1 large shallots, minced fine
2 tablespoons butter
4 cups vegetable broth
1/2 cup milk
1/4 cup sour cream
1/4 teaspoon cayenne pepper
In a large soup pot, saute shallots in 2 tablespoon of butter over medium heat for 2 minutes. Add butternut squash. Pour in vegetable broth until squash is covered. Cover pot with lid and cook over medium-high heat for 30 minutes, until butternut squash is fork tender. Remove from heat. Puree soup with an emulsion blender or in a food processor.
When soup has cooled stir in milk, sour cream, salt and cayenne.
